How to Add Stracciatella to Any Ice Cream Flavor

Equipment

  • Microwave-Safe Bowl or Double Boiler

Ingredients

  • 28 g bittersweet chocolate (1 ounce)
  • 1 g neutral oil (¼ tsp; optional)

Instructions

  • Chop 28 g bittersweet chocolate into small pieces, about the size of chocolate chips.
  • I don't recommend using chocolate chips since they're designed to hold their shape under high heat. They take longer to melt, and they can burn in that time.
  • Microwave in 15-second increments, stirring between, until fully melted. Alternatively, heat the chocolate over a double-boiler until melted.

  • Optionally, stir in 1 g neutral oil to get the chocolate to a drizzling consistency.

  • With your compressor dasher spinning, drizzle in the chocolate in the last 2-3 minutes of churning. It will break up into small, thin shards.

Notes

Yield: This makes enough stracciatella to accompany one full ice cream recipe (usually 2-3 pints)
  • Use a high-quality chocolate you like the taste of. I find Ghirardelli 60% baking chocolate works well here and is relatively inexpensive. 
  • I prefer coconut oil, but I have also used avocado oil successfully. Canola or grapeseed oil would work as well, but skip olive oil unless you want that flavor.
